Traditional ANZAC Biscuit Recipe

The exact origins of the ANZAC biscuit are uncertain, but it is believed that the recipe was developed by women's groups such as the Country Women's Association (CWA) in Australia and the Women's Patriotic Association in New Zealand. The ingredients for the biscuits were carefully selected to ensure they were nutritious, easy to transport, and had a long shelf life. The traditional recipe includes rolled oats, flour, sugar, coconut, butter, golden syrup, bicarbonate of soda, and boiling water.

Zucchini Pancakes

This basic recipe is quick and easy to make. It is a great mid-week dinner as it's healthy, nutritious and delicious. These pancakes pair very nicely topped with smoked smoked salmon for added protein, and they also work very well with a dollop of my yoghurt tahini sauce.

Sugar Free Rum Balls

These delicious little balls of heaven are a perfect treat when you feel like something sweet and are trying to be good. They are quite rich and decadent and usually hit the spot. Because they aren't baked the alcohol is retained, but you can replace the rum with and alcohol free extract or with vanilla essence.

This is a great gluten free savoury vegetable loaf that I often make at home with vegetables that are looking a little tired in my fridge. It is highly nutritious and absolutely delicious sliced out of the oven smothered in butter.
