A Rainbow & Unicorn Inspired Celebration for Neve's 11th Birthday

We celebrated Neve's 11th Birthday with an incredible Rainbow and Unicorn themed pool party!
Neve loves anything to do with rainbows and unicorns and we decided that was the perfect theme for her birthday party this year - and it was actually so easy to pull together! After a week of pouring rain and miserable weather, the rain cleared up just in time for an afternoon of celebration.
Making Unicorn Bark for the Party
Before the party, Neve and I made some "unicorn bark" - and it couldn't be simpler to make.
Simply melt some chocolate (we used milk chocolate and white chocolate) and spread it out onto a baking sheet lined with baking paper. Sprinkle over colourful lollies, sprinkles and edible glitter and place your bark in the fridge to chill. Once it's hard, break it apart into pieces and enjoy!
We used this to decorate her rainbow cake - but it would also make the perfect party favour or birthday treat to share with friends at school!
The night before the party, Neve helped me blow up huge rainbow coloured beach balls to scatter around the pool area.

As the party was held in the afternoon after school, we set up a rainbow themed snack bar for Neve and her friends to enjoy - filled with rainbow and unicorn themed treats!
There were rainbow swirled meringues...
Rainbow and unicorn cookies and cake pops packaged up for Neve's friend's to take home...
Lots of rainbow coloured lollies and chocolates in pretty jars and colourful buckets...
Rainbow sprinkled donuts...
And we finished the celebrations off with Neve's gorgeous Rainbow Birthday Cake!
The cake was a rainbow layer cake, covered with frosting and rainbow sprinkles and decorated with chocolate letters, pieces of our unicorn bark, rainbow lollipops and rainbow bunting.
Sprinkles and chocolate letters are an easy cake hack as you really can't mess them up. Below are some of my favourite alphabet moulds which you can buy to use yourself. Simply melt your chocolate, pour them into your moulds and chill them in the fridge before popping the letters and decorating your cake.
In the black leading a poolside rendition of YMCA would be none other than fellow housewife Krissy Marsh - the party queen!
At the end of the party, Neve's friends each went home with a unicorn pinata, filled with rainbow and unicorn themed treats. These Unicorn Pinatas are just $4 each at Kmart (available here) and are seriously cute!
