Vegetable Loaf — Gluten Free
This is a great gluten free savoury vegetable loaf that I often make at home with vegetables that are looking a little tired in my fridge. It is highly nutritious and absolutely delicious sliced out of the oven smothered in butter. I also like to preslice the loaf and freeze the slices between sheets of baking paper so that I can enjoy a slice when I'm feeling a bit peckish and not sure what I feel like. I think the best way to reheat it is in the oven straight out of the freezer on 160° C for a few minutes. You can toast it, but it seems to crumble a little. Enjoy! Nx
