My Coconut Bread Recipe from Season 1

On Episode Three, I invite Athena and Lisa over for morning tea to try and smooth things over after another dramatic get together with the girls. We enjoyed my favourite Coconut Bread, served warm with butter and raspberry jam - and here's the recipe so you can make it for yourself!

Coconut Bread

Coconut Bread

This is a fast and easy recipe for the most delicious coconut bread. Its a great alternative to Banana Bread and works well for both morning and afternoon tea - or anytime really! I love mine warm out of the oven smothered with jam and lashings of butter.

  1. Preheat your oven to 180C/355F.
  2. Grease and/or line a loaf tin with baking paper and set aside.
  3. Combine your milk, eggs and vanilla in a medium mixing bowl.
  4. In a separate bowl, sift your flour and add your baking powder, cinnamon, sugar and coconut, stirring to combine.
  5. Add your milk mixture, stirring until just combined - being careful not to over mix.
  6. Fold through your pecans or walnuts and pour your batter into your prepared tin.
  7. Bake for 1 hour or until cooked through and a skewer inserted into the middle of the loaf removes clean.
  8. Leave your bread to cool in the tin for 10 minutes before removing it from the tin and leaving your loaf to cool on a wire rack.
  9. Serve warm or room temperature, toasted or fresh with butter or your favourite toppings.
