Sugar Free Rum Balls

These delicious little balls of heaven are a perfect treat when you feel like something sweet and are trying to be good. They are quite rich and decadent and usually hit the spot. Because they aren't baked the alcohol is retained, but you can replace the rum with and alcohol free extract or with vanilla essence. You can adapt the recipe and add currants or nuts depending on what you have at home. I sometimes add cocoa nibs and peppermint oil for a delicious 'after eight' treat.

Instructions

  1. In a large bowl mix all the ingredients together until it is well combined and forms a sticky texture. If it's too dry add some more coconut oil, and if it's too wet add some more almond meal.
  2. Using a spoon take a 1/10th of the mixture and roll into little balls
  3. Roll the balls into the reserved desiccated coconut
  4. Transfer the balls into an airtight container and leave to set in the fridge for at least an hour. Serve chilled.

Notes

*I like to use almond meal as it adds a bit of crunch, but almond flour works just as well and is more refined in taste and texture. You can adapt the recipe and add currants or nuts depending on what you have at home. I sometimes add cocoa nibs and peppermint oil for a delicious 'after eight' treat. They last in the fridge for up to a week, but I've never tested that as they usually disappear in a few days at my place.
