- 1 Preheat oven to 180C/355F.
- Line a baking tray with baking paper and set aside.
- Place potatoes in a saucepan. Cover with cold water. and bring to the boil over a high heat.
- Once boiling, reduce the heat to medium and cook for 12 minutes or until just tender. Drain. Return to your potatoes to the dry pan.
- Add your garlic, rosemary, olive oil and sea salt to the pan with your potatoes and toss to coat.
- Place your potatoes in a single layer on your prepared tray.
- Roast your potatoes for 30 to 50 minutes (depending on size) until golden and crisp, turning a few times in between.
Notes
*You can switch the rosemary for whatever fresh herbs will compliment your main course.
