With an extra protein punch, Krissy’s Chicken Minestrone Soup is the ultimate winter lunch or dinner - and especially loved by her daughter Milana who takes this soup for lunch most days.

- Heat olive oil in a large pot. Sauté onion, garlic, carrot, and celery until softened (about 5–7 mins).
- Add zucchini and green beans. Cook another 3 minutes.
- Stir in diced tomatoes, beans, herbs, Parmesan rind (if using), and chicken stock.
- Bring to a boil, reduce heat, and simmer for 15 minutes.
- Add pasta (if using) and cook according to packet instructions, usually 7–10 minutes.
- Add the shredded chicken breast and simmer 2 more minutes to heat through.
- Season with salt and pepper to taste.
- Remove Parmesan rind. Serve with fresh parsley and a generous sprinkle of grated Parmesan.
