Decadent Chocolate Pavlova Recipe

Perfect for entertaining, this chocolate pavlova is rich, decadent and seriously delicious. As seen on At Home with Krissy, Victoria and Nicole.

- Preheat your oven to 180°C/355°F and line a large tray with baking paper.
- Add your egg whites to a clean mixing bowl or bowl of a stand mixer with whisk attachment.
- Beat until egg whites are foamy and stiff.
- Slowly mix in the sugar a spoonful at a time, until all of the sugar has been added and the meringue is thick and glossy. Your meringue is ready when you can turn the bowl upside down and the mixture stays in place and you can no longer feel the gritty sugar in the mixture.
- Gently fold in the cocoa powder, balsamic vinegar, and chopped dark chocolate. Do not over-mix
- Divide the meringue into two halves and mound the mixture into two equal-sized, circles on the baking tray. Use a spoon to smooth out and shape the meringues, then place them in the oven and immediately reduce the temperature to 150°C/300°F.
- Bake your meringues for 1 hour before turning off the oven and opening the door slightly (you can place a tea towel in the door of the oven if your oven door won't stay ajar on it's own). Allow meringues to cool completely before removing from the oven.
- In a clean bowl, whisk your whipping cream, icing sugar and vanilla until soft peaks form.
- Place one of your meringue circles on your serving plate and add half of your whipped cream. Drizzle over chocolate hazelnut spread or melted chocolate and top with the second meringue, repeating the process with more whipped cream and spread/chocolate.
- Decorate as desired (I like to add fresh berries and shaved chocolate) and serve immediately.
