To Roast Your Cherry Tomatoes
  1. Drizzle your cherry tomatoes with olive oil and sea salt and roast in the oven at 200C for 15 mins. Once your see the first few tomatoes start to char, take them out of the oven.
  1. Add your olive oil to a large saucepan over a medium heat. Heat your oil and add your onion with 3 pinches of salt. Add in your finely chopped basil, sautéing until your onions are soft and translucent.
  2. Add in your garlic, stirring until fragrant.
  3. Add your roasted tomatoes and bone broth and stir over a medium-high heat.
  4. Blend with an immersion/stick blender until your desired consistency is reached.
  5. Simmer over a low heat, uncovered, until thickened.
  6. Add in your thickened cream, stirring until combined.
  7. Season to taste with salt and pepper and serve with pepper and fresh basil leaves.
