Whole Roasted Cauliflower with Tahini Sauce
Inspired by Nicole’s Lebanese heritage, this Whole Roasted Cauliflower is flavoured with Lebanese spices and is drizzled with a delicious tahini sauce. Perfect for Autumn entertaining and a great vegetarian dish to share with friends.

To Prepare the Cauliflower
- Preheat your oven to 210C/410F fan forced.
- Steam your cauliflower for 10 mins in a large saucepan with about an inch of water.
- Place your steamed cauliflower on your prepared tray. drizzle with olive oil and rub with your salt and turmeric.
- Sprinkle with cumin seeds, adding a bit of extra olive oil if needed to ensure the whole cauliflower is covered and the spices have stuck to the cauliflower.
- Roast for 40-50 mins or until soft.
Prepare the Tahini Sauce
- In a mixing bowl add your tahini, lemon juice, garlic, olive oil and salt.
- Gradually add in your ice water, whisking until smooth and combined. If needed, add a drizzle of ice water until you reach your desired consistency.
To Finish
- Once your cauliflower has roasted, leave to sit for 15-20 mins to cool slightly, then place onto a bed of rocket on your serving dish.
- Drizzle with your tahini dressing and sprinkle with za'atar, fresh parsley, pumpkin seeds and pomegranate seeds.
