Instructions

  1. In a bowl, toss the sliced eye fillet with soy sauce, sesame oil, and cornflour. Set aside for 10–15 minutes.
  2. In a small bowl, combine cracked black pepper, soy sauce, oyster sauce, Shaoxing wine, sugar, and water. Stir to mix well.
  3. Heat 1 tbsp oil in a hot wok or large frying pan. Sear the marinated beef in batches for 1–2 minutes until browned but still tender. Remove and set aside.
  4. Add another tablespoon of oil to the wok. Sauté onion, capsicum, garlic, and ginger for 2–3 minutes until fragrant but still crisp.
  5. Return the beef to the wok. Pour in the sauce and toss everything together on high heat for about 1–2 minutes, allowing the sauce to coat and thicken slightly. Add the spring onions at the last moment and give a final toss.
  6. Plate immediately. Best served with gluten-free fried rice or steamed jasmine rice and stir-fried Asian greens.
